Japanese Farmhouse Ferments

Come explore the world of Japanese Farmhouse Ferments. In this class we will look at the roles salt, vinegar, miso, and bacterial cultures play in traditional Japanese fermentation recipes. We will taste a variety of ferments made here on our farm to see how different techniques and recipes transform seasonal produce. Next we will break into smaller groups and make a variety of fermented items using the methods of preservation covered in the lecture and tasting. We will use fresh produce from the farm and each group will get to be creative in selecting which vegetables to use in their recipes.

 

Each student will go home with a sample of each type of fermentation process covered in class, a handout covering the techniques and recipes used, and the confidence to replicate what we learned in their own kitchen using locally available fruits and vegetables.

Nose to Tail Hog Butchering

Date: October 1st

Tuition: $120 + $80 meat fee

This hand’s on workshop will teach students how to get the most out of locally and ethically raised pigs by covering traditional butchering, curing and cooking methods. Each student will get the opportunity to work in pairs breaking down a half hog learning how to utilize each part. While we work we will discuss different butchering styles and goals, cooking and curing methods and how to properly wrap meat for the freezer. We will make ground sausage as a group and go over salting and smoking techniques for producing delicious home cured bacon.

You will go home with approximately 10 pounds of meat wrapped and ready for your freezer, an in depth knowledge of how to cook each cut for maximum flavor, and a simple handout of recipes and curing techniques.

Herbal First Aid Kit

Carrying a first aid kit is a practical and easy way to take ownership over your own health. In this class we will cover some basic first aid protocol, what store bought items to include in your kit and then we will delve into the world of herbal first aid. We will learn about some local herbs that work wonderfully for first aid situations and then we will make three products for your kit: an antibacterial powder to prevent infections and stop bleeding, an all-purpose wound salve, and a topical liniment for poison oak, bites, stings and scratches.

Each student will go home with the knowledge of how to build an all-purpose first aid kit, three herbal preparations to get their kit going, and some basic knowledge about local herbs and simple medicine making techniques.

Making Herbal Ales

Making Herbal Ales

In this class we will learn about health benefits, history and lore of select country wines (herbs + cane-based ferments), Gruits (herbs + grain or seed-based ferments), Methelglins (herb + honey based ferments) and Specialty Herbal Beers. We will start the day wild harvesting a few seasonally available plants and learning about their role in herbal ales.  We'll spend the second half of the day engaged in a brewing demonstration and tasting where students will get to sample a wide variety of botanic ales: Urtication Ale, Cherry Yarrow Kriek, Elderberry Wine, Mountain Gruit and Ebulon.

Each student will leave with there own gallon jar of ale brewed in the class, along with an airlock to keep the fermentation process going at home. A handout on the herbs and techniques discussed in class will also be provided.

Grow Your Own Medicinal Herb Garden

Join Lara Pacheco of Seed and Thistle Apothecary to welcome in the summer by learning to cultivate and use homegrown medicinal herbs.  In this class students will learn about the medicinal properties of Calendula, Motherwort, Marshmallow, and Yarrow, four herbs that can be easily cultivated in your home garden. We will use the medicinal herb gardens on the farm to learn the best growing, harvesting and processing techniques for each plant and why learning to grow your own medicine can be a wonderful way to invite herbs into your home. In the second half of the class students will participate in making an infused calendula oil and a yarrow tincture while learning about simple medicine making techniques and how to transform home grown herbs into powerful medicine.

Students will leave with the confidence to begin growing and making their own medicine at home, a jar of yarrow tincture, as well as a transplants to help get their own medicinal garden started.

Come out to the farm and learn how to ethically harvest, pluck, and clean chickens. We will work with the pasture-raised chickens that we produce on our farm, and each student will have a hand in each part of the process to gain the confidence and knowledge to process birds at home. This is a great way to get a deeper understanding of where our meat comes from and how to source ethically raised and harvested meat products. We will process a batch of 50 birds from start to finish, and students will go home with a bird to cook or freeze.

Dive deep into understanding herbal medicine using your own intuition and senses. This class offers guided techniques to learn how to evaluate herbal healing properties through organoleptic medicine tastings. We will discuss herbal energetics, basic natures and flavors of herbs, and discuss different herbs and how they work with different kinds of people. This class will connect things you've learned before about herbal medicine with simple direct experiences of the senses that are accessible to anyone. We will spend time in the Herb Garden at Flying Coyote Farm and learn about garden herbs with an intuitive method based on direct personal experience with the plants.

New Moms need self-care! Whether you are a new mom – or even a friend, sibling, or partner to a new mom – come and learn some basic techniques to help give new moms a sense of self-care. We will be doing a roundtable discussion on healing products new mothers need and how we can make them ourselves at home. In this workshop we will be teaching about helpful and safe herbs new moms can incorporate into their daily lives. We will demonstrate baby-safe tincture-making using glycerin, and we’ll mix up some nourishing teas. We also will make a healing salve for mom and baby using gentle herbs and hydrating organic oils. Each student will go home with a tea blend and a healing salve, along with an informative handout about safe and gentle herbs for mom and baby.

Goat’s Milk Cheese Making 101

This is a great class for beginning cheese-makers and goat enthusiasts. Students will go through the cheese-making process, beginning with a demonstration on hand milking and safe milk handling practices. Then, we’ll head to the kitchen, where we will make two types of soft cheeses, queso fresco and chevre. Lili will teach the foundation concepts of milk science, including discussions of tools, methods, and procedures to use in your own kitchen. Students will go home with recipes, a sample of each type of cheese made in the class, and the knowledge to replicate the recipes in their own kitchens using farm-fresh or store-bought milks.

This basic soap making class will teach you everything you need to get started making your own goat’s milk soaps at home using the traditional cold process method. We will cover how to safely use and handle caustic lye and the basic principles of the saponification process. Next we will discuss basic techniques for successful milk-based soap making including different oil properties, lye calculators, temperature, pH, curing, and additives (exfoliants, colorants, dried herbs and essential oils). We will demo making a batch of goat’s milk soap using the above information and then students will work with a partner to make their own small batch of soap to take home with you to cure!

You will leave with a bar of finished soap, a list of basic goat’s milk based recipes and a purchase list of everything you need to get started. OPEN TO CHILDREN 12 & up!

Spring Medicine Making

Spring is the perfect time to focus on revitalizing and rejuvenating after the dark days of winter. In this class we will work with cleansing, astringent, and tonic herbs to make our transition into summer feeling strong and supported. We will begin class by venturing out onto the farm and into the woods at the base of Mt. Hood. Here we will look at the abundance of local herbs that are appropriate for cleaning out and rebuilding our systems in spring. We will harvest nettle, dandelion, claytonia and horsetail while covering wildcrafting ethics, simple plant ID and basic medicinal properties of each herb. The afternoon will be spent at the farm transforming our herbs into tinctures, tonics and teas to be used as preventative spring medicine. We will also cover some basics of how to incorporate these herbs into the spring kitchen.

Each student will go home with a sample of the medicines that we make in class, a handout with information about the herbs used and medicine making techniques covered and the information needed to begin some rituals around spring health to start cleansing and revitalizing your system.

Traditional Herbal Honey Elixirs: Oxymels

Come and learn an ancient method of medicine-making! Oxymels are powerful herbal infusions that combine raw honey, herbs, and raw vinegars. Honey is one of the oldest forms of medicine, and still has a valuable place in the modern medicine chest. We will discuss the history of honey, its medicinal properties, different preparations, and how to incorporate honey as a potent preventative in seasonal health. We will visit our apiary and cover natural bee care and honey harvesting. Then, we will tour the herb garden and harvest herbs for our formulations. Each student will get to make a custom blend to fit his or her own medicinal needs using herbs, honey, and vinegar from the farm.

Join Lili Tova at Flying Coyote Farm in Sandy, OR to learn the joys of transforming tomatoes and tomatillos into delicious salsas and sauces. We will go over all the basics of safe home preserving while getting to taste a sampling of sauces prepared on the farm. Students will then move into the kitchen and work together to can a charred tomato salsa, a smoked tomatillo salsa and a simple canned tomato sauce using delicious tried and true farm recipes and farm fresh produce. Throughout the process we will discuss variations on each recipe and how to utilize the sauces in the kitchen.

Each student will go home with a jar of each sauce and salsa and an informative handout to get them canning at home. A great class for beginners and experienced canners.

This is the perfect class for those looking for the next step in their cheese making adventure. We will move beyond soft cheeses and begin experimenting with aging and pressing. This class will cover different draining methods and styles, simple to professional cheese presses, and different options for aging. We will taste a variety of cheeses, and make two cheeses in class, a brined and aged feta and a pressed and aged farmhouse cheddar.

You will go home with a sample of each cheese, a handout full of tips and recipes, and the confidence to take your cheese making to the next level.
